Apple Cinnamon Protein Muffins

Makes 18 muffins

2.5 cups whole wheat flour

1/2 cup light brown sugar

1/2 cup cane sugar

2 tsp baking powder

3 tsp cinnamon

1/4 tsp nutmeg

1/4 tsp ground cloves

1 tsp salt

1/3 cup coconut oil

2/3 cup milk

1 egg

2 medium apples, cored and roughly chopped (I like mine small diced)

1/2 cup (or ~3 scoops) collagen protein

Instructions

  1. Preheat oven to 350º F.

  2. Add all ingredients to a bowl and mix together.

  3. Grease a muffin pan or place muffin cups in pan and fill them 2/3’s of the way full with the batter.

  4. Place in oven and bake for about 20 minutes or until the edges are golden brown.
