Mini Meatloaf

Serves 2-4

1 lb ground beef

1 cup ketchup

1/4 cup flat leaf parsley, chopped (Basically a handful of parsley)

3 tbsp fresh oregano

2 tbsp fresh thyme

2 tsp salt

1/2 tsp pepper

4 cloves garlic, chopped

1/4 white onion, chopped (about 1/2 cup!)

1/4 cup breadcrumbs

1 tbsp Worcestershire sauce

2 eggs

Instructions

  1. Preheat oven to 350º F.

  2. Add all ingredients except for 1/2 cup of ketchup to a bowl and mix together. I put a glove on and mash it all up with my hand.

  3. Grease a muffin pan and fill each muffin cup 3/4s of the way full with the meat loaf mixture. Then, top each cup with ketchup. (Using the remaining 1/2 cup of ketchup. I usually just do it straight from the ketchup bottle. And 1/2 cup is just a suggestion for all of the cups, you can absolutely use more or less!)

  4. Place in oven and bake for 25 minutes. You can store these in a sealed container in your fridge for up to a week!
