Sweet Shepherds Pie

Serves 4

1 lb of ground beef

1 bag of frozen mixed veggies (like the carrots, peas, corn one)

4 medium sweet potatoes (This is what makes it “sweet”. You can totally use russet potatoes if you don’t like sweet potatoes!)I

1/2 onion (yellow or white) diced

1 TBSP olive oil

Salt and pepper, to taste

1 tsp garlic powder (or two cloves garlic, minced)

1 tsp of paprika

2 sprigs of fresh thyme (or 1/2 tsp of dried thyme)

3 TBSP of butter (or more who am I to judge??)

1/2 cup of milk

  1. Chop potatoes and put them in a pot and start boiling them. (I don’t peel mine but you’re certainly entitled to do so.)

  2. Cook diced onions with the olive oil on medium heat til’ they start to become fragrant, which is about 5 mins. If you’re using fresh garlic, add it here as well.

  3. Then, add your ground beef and spices and cook the meat until browned. Once cooked, add the frozen veggies and cook for another 5 minutes.

  4. Take the meat and veggies off the heat and transfer to a dish to go into the oven. (unless you’re already cooking in a deep, oven-safe pan) Then make your mashed potatoes!

  5. Top meat mixture with potatoes, then break the 3 tablespoons of butter into pieces and place it evenly on top of mashed.

  6. Bake in oven for 20-30 mins, or until the top starts to brown and bubble along the sides.
