Lemon Balsamic Chicken

Serves 5

5 chicken thighs

Juice of 1 lemon

4 TBSP balsamic vinegar

3 TBSP honey

1/4 cup olive oil

2 sprigs of fresh thyme, chopped or 1 tsp of dried thyme

1 tsp garlic powder

1 tsp salt

Instructions

  1. Preheat oven to 350 degrees Fahrenheit.

  2. Place chicken thighs on a baking sheet and place them in the oven.

  3. Now make your glaze, combing oil, lemon juice, balsamic vinegar, honey, thyme, garlic powder and salt in a small bowl.

  4. When the chicken has been in the oven for 10 minutes, take them out and brush a layer of the balsamic glaze on each piece. Be liberal with it! If you don’t have a brush in your kitchen (I like these pastry brushes) you can use a spoon and spread the glaze that way. After you put a layer on, place the chicken back in the oven and repeat that process 2 more times. Or until your chicken temperature of 165 degrees.
