Strawberry Peach Crisp
Serves 6-8
4 medium peaches, sliced
6 medium fresh strawberries, sliced
2 tsp of lemon juice (or juice of half lemon)
1/4 cup cane sugar
1 1/2 tsp cinnamon
1/4 tsp ground cloves
1 tsp salt
1 tbsp vanilla extract
1 1/2 cups oats
1/2 cup brown sugar
1/3 cup flour
6 tbsp salted butter, melted
Instructions
Preheat oven to 350º F.
To a bowl, add the sliced fruit, cane sugar, lemon juice, vanilla extract, 1 tsp cinnamon, cloves and salt. Mix together and add to a 9x13 baking dish. (You can also just add all of those ingredients to the baking dish and mix together in the baking dish to save yourself a little bit of dishwashing!)
In another bowl, mix together the oats, brown sugar, flour, melted butter and 1/2 tsp of cinnamon.
Add the oat mixture to the top of the fruit mixture and place in in the oven for 25 minutes, or until the sides are bubbling and browning.
Take out of oven and let it sit for about 10 minutes before serving. I suggest serving with vanilla ice cream!
