Copy(kat) Trader Joe’s Arugula Salad

Serves 4

SALAD:

4 cups arugula

2 carrots (I choose rainbow carrots because they are fun and give visual interest)

1 medium zucchini squash

1/4 cup raw almonds, chopped roughly

1/4 cup shaved parmesan

DRESSING

1/4 cup olive or avocado oil

Juice of 1 lemon or 2 tbsp lemon juice

1 tsp apple cider vinegar

1 tbsp honey

1 tsp dijon mustard

1 tsp garlic powder

1/2 tsp black pepper

1 tsp salt

Instructions

  1. Add arugula to bowl. Shave the carrots and zucchini into ribbons with a vegetable peeler. (A “how-to” is provided in the video below!) Vegetables are shaved, add them to the bowl as well as the chopped almonds.

  2. Mix all of the dressing ingredients in a separate bowl then add it to the salad. Mix the salad with either your hands or utensils, making sure all of the arugula is coated with the dressing.

  3. Once salad is mixed, top it with the shaved parmesan. Enjoy!
